Oatmeal Blueberry Muffins


  • 1 c. quick oats
  • 1 1/4 c. all-purpose flour
  • 1/2 c. sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 egg
  • 1/2 c. milk
  • 1/3 c. vegetable oil
  • 1 c. fresh blueberries


Heat oven to 400F.

Combine dry ingredients in a bowl.  Mix egg, milk, and oil into dry ingredients.  Add blueberries into batter.  Fill greased or paper-lined muffin cups with batter 2/3 full.

Bake 18-22 minutes or until golden brown.

Yield: 12 muffins.

VERDICT:  John made these with a Neat Egg, and they are delicious!  They taste like graham crackers.  Keep! (From the side of the oatmeal box.)
